What is IQF?
IQF (Individually Quick Frozen) is a state-of-the-art freezing technique that revolutionises food preservation.
IQF involves rapidly freezing individual pieces of food. Unlike traditional freezing methods that freeze items in large blocks or batches, IQF freezing ensures that each piece is frozen separately. This not only preserves the freshness, texture, and flavour of the food but also prevents the formation of large ice crystals that can compromise its quality.

New Zealand Abalone
New Zealand Abalone or Blackfoot Paua (Haliotis iris) is unique to New Zealand and has a rocky shell with a stunning multicoloured interior featuring blue and green hues. The flesh is white with a black covering and is prized for its tenderness and umami flavour. The abalone are hand harvested sustainably by a team of experienced divers from New Zealand's pristine southern coastline.
